Ingredients
1 cup quick-cooking grits
4 cups water or chicken broth
Salt and pepper to taste
1 pound medium shrimp, peeled and deveined
2 tablespoons olive oil
4 slices bacon, chopped
1 small onion, finely chopped
1 bell pepper, finely chopped
2 cloves garlic, minced
1/2 cup chicken broth
1 cup cherry tomatoes, halved
1 tablespoon Cajun seasoning
2 tablespoons fresh parsley, chopped
Lemon wedges for serving (optional)
Directions
- Cook the Grits:
In a medium saucepan, bring the water or chicken broth to a boil. Stir in the grits and reduce heat to low. Cook, stirring occasionally, for about 5-7 minutes or until thickened. Season with salt and pepper to taste. Remove from heat and cover to keep warm. - Prepare the Shrimp:
Season the shrimp with salt, pepper, and half of the Cajun seasoning. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside. - Cook the Bacon and Vegetables:
In the same skillet, add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate. Leave about 1 tablespoon of bacon drippings in the skillet and discard the rest. Add the remaining olive oil to the skillet if needed. - Sauté the Vegetables:
Add the chopped onion and bell pepper to the skillet. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant. - Finish the Dish:
Pour in the chicken broth and cherry tomatoes. Stir in the remaining Cajun seasoning. Bring to a simmer and cook for 2-3 minutes until the tomatoes start to soften - Combine and Serve:
Return the cooked shrimp to the skillet. Stir in the cooked bacon and chopped parsley. Serve the shrimp and vegetable mixture over the warm grits. Garnish with additional parsley and lemon wedges if desired.
