  • 1/4 cup red onion, finely diced

  • 1/4 cup fresh cilantro, chopped

  • 1 jalapeño, seeded and finely chopped (optional, for a kick)

  • Juice of 1 lime

  • Salt and pepper, to taste

Directions

  • Prepare the Tropical Salsa:
  • In a medium bowl, combine the diced pineapple, mango, red bell pepper, red onion, cilantro, and jalapeño (if using).
  • Squeeze the lime juice over the mixture and season with salt and pepper to taste.
  • Mix well and let the salsa sit in the refrigerator for at least 15 minutes to allow the flavors to meld.
  • Cook the Grouper:
  • Preheat your oven to 375°F (190°C).
  • Pat the grouper fillets dry with paper towels and season them with salt and pepper on both sides.
  • In a small bowl, whisk together the orange juice, lemon juice, honey, soy sauce, Dijon mustard, minced garlic, grated ginger, and red pepper flakes (if using).
  • Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the grouper fillets and sear for about 2 minutes on each side until they develop a golden-brown crust.
  • Pour the citrus glaze over the grouper fillets and transfer the skillet to the preheated oven.
  • Bake for about 8-10 minutes, or until the fish flakes easily with a fork and is cooked through.
  • Serve the Dish:
  • Remove the skillet from the oven and let the grouper rest for a minute.
  • Transfer the fillets to serving plates and spoon the tropical salsa over the top.
  • Garnish with fresh cilantro and serve with lemon or lime wedges on the side for an extra burst of citrus flavor.
